2 T olive oil
1 med onion chopped
3 cloves garlic minced
1 lb Italian Sausage fresh
3 lg russet potatoes cut 1 inch chunks
5 c chicken broth
2 t dried basil
1 t dried fennel
2 c chopped kale
1/2 c coconut milk or heavy cream
1-2 t crushed red pepper
Salt and pepper

Directions:
Directions:
Saute onion, garlic, sausage in the oil to brown meat. Add to slow cooker and top with potatoes, herbs, and chicken broth. Cook low 4 hours, add kale, cook another 30 min.
Add milk or cream, red peppper, salt and pepper.
Serve.

3 slices of bacon or 3-4 oz pancetta cooked first.
Also can add escarole or savoy in place of kale
