1 c. butter
½ c. white sugar
2 c. flour
CUSTARD:
4 eggs
1½ c. white sugar
¼ c. + 1 Tbsp flour (5 Tbsp total)
⅔ c. fresh squeezed lemon juice (approx. 3 lemons)

Step 1
Preheat oven to 350 degrees F (175 degrees C).

Step 2
In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into the bottom of an ungreased 9x13 inch pan.

Step 3
Bake for 15 to 20 minutes in the preheated oven, or until firm and golden. In another bowl, whisk together the remaining 1 1/2 cups sugar and 1/4 cup flour. Whisk in the eggs, lemon juice and zest of 2 lemons. Pour over the baked crust.

Step 4
Bake for an additional 20 minutes in the preheated oven. The bars will firm up as they cool.

I added some lemon zest to the crust as well. The crust is better to be overbaked than under-baked. You can dust some powdered sugar over the top prior to serving, but it will absorb into the bars if they sit for a while. These last in the fridge for about 3 days.
