2 cups gluten free 1:1 flour mix
1/3 cup Xylitol sugar substitute
2 1/4 tsp baking powder
1 1/4 tsp salt
2 tsp ground cinnamon
2 large eggs
3/4 cup whole milk
2 tsp vanilla
2 Tbsp butter, melted
3 cups diced apples
peanut or olive oil for frying

Glaze:
1 1/2 cup Xylitol powdered sugar substitute
1/4 tsp salt
1 tsp vanilla extract
1/4 cup whole milk

Directions:
Directions:
In large mixing bowl combine first 9 ingredients. Whisk well to combine. Stir in diced apples.

Heat a couple of inches of oil over medium to medium-low heat. When you drop a little sample of batter you want it to sizzle and rise to the top. If it doesn’t sizzle and rise the oil is not hot enough: if it burns quickly the oil is too hot.

Drop small spoonfuls of batter into the hot oil. Once they are deep golden on one side give them a flip. You are looking for a deep golden brown on both sides, should take about 3 - 4 minutes of frying.

Remove and drain on a paper towel.

Glaze:
Mix all ingredients until smooth and drizzle over the warm fritters.
