6 Slices Bacon......................................6 Cups Water
1 Cup Onion, chopped..........................1 tsp Sugar
1 Cup Celery, chopped..........................1 tsp salt, pepper, parsley
1 Cup Carrots, diced..............................6 Tbsp Butter
3 Cups Potatoes, diced..........................¾ Cup Flour
⅓ Cup Red Bell Pepper..........................1 Cup Half & Half
3 Cups Corn............................................8 oz Shredded Cheese
2 Chicken Bouillion Cubes

Directions:
Directions:
In a large pot cook bacon until crisp then crumble and set aside til later. Add onions to the bacon grease and cook until brown. Add the remaining vegetables and cook about 10 minutes until softened. Add the water, sugar, seasonings and bouillion cubes. Cover and simmer until potatoes are done. In a small pot make a roux of butter and flour and gradually whisk in flour until smooth, then whisk into the soup, Heat through then add the cheese and mix until melted. Add the bacon and serve.
*** You can cook with the cobs after the corn has been scraped off. This will help to thicken the soup.
