Ingredients:  
3 lbs zucchini (cored, peeled & grated)
4 oranges with peel (finely chopped with knife)
1 lemon with peel (finely chopped with knife)
¼ tsp. baking soda
10 cups sugar
6 oz. Certo (liquid)


Directions:
Directions:
Put zucchini, oranges and lemon in large pan.
Add baking soda and sugar.
Stir thoroughly and allow to stand for 30 minutes or more.
Bring to rolling boil.
Turn down heat and simmer for one hour.
Remove from heat, add certo and stir well.
Pour into jars and seal.

* Makes a large quantity.
