12 lasagna noodles (about a half a box)
1 lb. Italian sausage, browned and drained
2 jars marinara sauce (can use Arabbiatta sauce for a bit of kick)
16 oz. container small curd cottage cheese (can also use ricotta or combination of both)
2 eggs, lightly beaten
4 c. shredded mozzarella cheese
1/2 c. grated parmesan cheese

Preheat oven to 375 degrees. Cook noodles according to package; drain and separate (and dry with paper towels if needed). In a large saucepan, combine cooked meat with 1.5 jars of marinara sauce; simmer for 5 minutes. In a large bowl, combine cottage cheese, 3.5 c. mozzarella, parmesan and eggs. Spray 9 x 13 baking dish with cooking spray and add .5 c. of marinara to cover bottom of dish. Place 4 noodles over the bottom of dish, overlapping slightly. Spread 1/2 the cheese mixture over the noodles then cover with 1/2 of the meat sauce mixture. Repeat with another layer of noodles, cheese mixture and meat mixture. Top with remaining layer of noodles, remaining sauce and sprinkle with remaining mozzarella cheese. Cover with foil and bake for 30 minutes. Remove foil and bake additional 10 minutes. Let stand for 10 minutes before serving.
