6 medium potatoes, red or white (about 2 lbs.)
1 1/2 cups Miracle Whip
1 medium onion, chopped
6 hard-cooked eggs, chopped
1/2 teaspoon celery seed
Salt and pepper to taste

Directions:
Directions:
Scrub unpeeled potatoes and cook in covered pan in boiling water for about 20 – 25 minutes or until tender when pierced with a fork. Don’t overcook. Cool until potatoes are easy to handle; peel jackets off and cut into cubes. Mix in onion, chopped eggs, celery seed, salt and pepper. Add Miracle Whip and fold in until all ingredients have been coated. Chill and serve.

Mother always put a few drops of yellow food coloring into the Miracle Whip (or Mayonnaise, whichever you prefer) and then mixed it in giving the salad a pretty “eggy” appearance. So I do, too.
