4 lbs pork butt roast or loin
1 tsp salt
1 tsp ground mustard
1 tsp black pepper
1 tsp paprika
¼ tsp cayenne pepper
1½ cups chicken broth
1 tsp liquid smoke
2 TB olive oil

Directions:
Directions:
Trim fat from pork.
Cut pork into 2 pieces.
Add dry ingredients into large bowl and whisk.
Add pork and mix to coat pork well.
Add oil to instant pot.
Set instant pot to saute.
Sear pork on each side for about 2 minutes.
Press cancel.
Remove pork from pot.
Add ½ cup of broth and stir to deglaze pot.
Add remaining broth and liquid smoke and pork.
Cook on high for 60 minutes,
Naturally release for 20 minutes.
Remove pork and shred.
