1 cup rice
1 TB olive oil
1 medium sweet potato, peeled and sliced
1 cup frozen corn
1 can black beans
1 TB cumin
1 tsp salt
½ tsp pepper

Directions:
Directions:
Cook rice with drizzle of oil.
In skillet saute sweet potatoes in olive oil over medium heat.
Cook until tender, about 20 minutes
Stir in spices.
Add black beans and corn.
Cook for about 5 minutes until heated through.
Mix in rice.
Serve.
