2 lbs sweet potato, peeled and cut into quarters
2-3 TB olive oil, divided
½ tsp salt
1 tsp fresh ginger, chopped
1 medium carrot, peeled and diced
½ tsp tumeric
1 tsp cumin
1 tsp coriander
1 tsp cinnamon
2 TB tomato paste
1 cup chicken or vegetable stock
1 can brown lentils, 14 oz. rinsed and drained
½ tsp caraway seeds
1 cup turkey tidbits

Directions:
Directions:
Add sweet potatoes to large pot.
Cover with water and bring to boil until tender, about 15-20 minutes.
Once tender, drain water.
Mash potatoes.
Stir in 1-2 TB olive oil and mix until smooth.
Season with salt and pepper if desired.

Heat oven to 400º
Heat olive oil in large skillet.
Add salt, ginger, garlic, and carrot.
Saute for a few minutes.
Add the rest of the ingredients.
Pour into casserole dish.
Spread sweet potatoes over lentil mix.
Bake for 15-20 minutes.
