1/2 c butter, softened
1 c sugar
2 eggs
1 tsp vanilla
1 1/2 c flour
1 tsp baking soda
1/2 tsp salt
1/2 c sour cream
1/2 c chopped walnuts (optional)
2 bananas, mashed

Directions:
Directions:
Preheat oven to 350º.

In mixer bowl stir together butter and sugar. Add eggs and vanilla. Combine flour, baking soda, and salt; stir into the butter mixture until smooth. Fold in sour cream and bananas (and walnuts). Divide evenly between 3 loaf pans, sprayed with cooking spray.

Bake 30 minutes and check doneness. Cool loaves in pans for 5 - 10 minutes. Remove and store covered. These freeze very well in Zip lock bags.

This recipe is my go to. I got it from the Wesleyan Christian School cookbook. It was contributed by one of my students, AJ Reynolds mother. Good memories. I don't think I've ever put any kind of nuts in this, much to Bruce's disappointment.
