Chocolate Orange Logs Recipe

c Butter, softened
1 c Sugar
1 egg
1 t grated orange rind
2 1/4 c All-purpose flour
1 t baking powder

Icing:

1/2 c semisweet chocolate chips
1 t vegetable shortening
1/4 t orange extract
3/4 c finely chopped peacans

Directions:
Directions:
Cream butter and sugar in a large bowl until fluffy. Add egg and orange rind; beat until smooth. In a medium bowl combine flour and baking powder. Add dry ingredients into the butter mixture. Stir until soft dough forms.

Spoon mixture into a piping bag with a large star tip (#68). Pipe 2 1/2" strips of dough 2 inches apart onto ungreased cookie sheet. Chill cookies 30 minutes.

Preheat oven 375 degrees. Bake cookies 8 minutes or until golden and firm. Allow to cool a couple minutes on the pan then transfer to wire rack to cool completely.

For icing: Place chocolate chips in microwave safe bowl and microwave at 50% power for three minutes. Stir. If chips need more time re-microwave in 30 second intervals until melted. Stir in orange extract. Dip each cookie into the chocolate and then the peacans. Place on waxed paper and allow to harden. Store in airtight container.
