Salmon:

1/2 c. Rice Wine
2 tbsp. rice vinegar
4 tbsp. miso paste
3 tbsp. brown sugar
1 tbsp. soy sauce
1 lb. salmon fillets

Garlic Noodles:

2 tsp. sesame oil
4 garlic cloves crushed
1 c. scallion, finely chopped
3 tbsp. soy sauce
2 tsp. rice vinegar
2 tsp. brown sugar
1 lb. noodles cooked and drained.

Garnish:

2 tbsp. sesame seeds, toasted
Chopped Cilantro
Chopped Scallions

Directions:

1. In a small saucepan, simmer together the rice wine, miso paste, brown sugar and soy sauce for 5 minutes. Remove from heat then strain into a measuring jug and allow to cool for 15 minutes.

2. Pour the miso glaze over the salmon, then marinate for at least 30 minutes but ideally overnight in the fridge.

3. In a large pan, saute the scallion and garlic in a splash of sesame oil until fragrant.

4. Pour in the soy sauce, vinegar and brown sugar and add 4 tbsp. of water.

5. Allow the sauce to simmer until the sugar has dissolved. Add the cooked noodles, then toss until coated in the sauce and sprinkle with sesame seeds.

6. Preheat the oven to 430º.

7. Transfer the salmon to a parchment or foil lined baking dish.

8. Bake for 7-10 minutes until the salmon is caramelized and just cooked.

9. Remove from the oven then serve over the noodles with cilantro, sesame seeds and scallions.
