Slow Cooker Butter Chicken Recipe

1 T olive oil
1 yellow onion chopped
4 garlic cloves minced
1 T fresh ginger minced
14.5 oz tomato sauce
1 t Garam masala
1 t cumin
1/2 t cayenne
1.5 lb boneless skinless chicken breasts
1 t sea salt plus more to taste

1/2 c coconut cream (solid part in can)
6 oz tomato paste
Pepper
Fresh cilantro for garnish
Cooked rice

Heat oil in slow cooker over med heat, then sauté chicken and brown on both sides. Remove to plate then saute onion until soft about 5 min. Add garlic and ginger, stir briefly. Add tomato paste for a minute or two then the seasonings. Place chicken on top, sprinkle with salt and cook on low for 3-6 hrs or high for 1 1/2 to 2 1/2 hrs. Remove breasts to plate and shred it.
To the slow cooker, add coconut cream and tomato sauce and stir until sauce thickened and not lumps. Add chicken back to sauce and stir well. Adjust seasoning to taste.
Serve over rice with cilantro on top.
