1 c flour
1 c oil

You can use a little bit less of the oil than the flour but must carefully watch it.

In a magnalite pan (or cast iron) combine 1 cup oil and 1 cup flour. Place in preheated 350º oven.

Bake for 2 hours (stir at 45 minutes) check at 1½ hours to see if it's the color you like, I stir again. Then take it out at 2 hours.

This didn't make the extremely dark roux but it was good. Great thing is I didn't have to stand at the stove the entire time.

When the roux is done remove from oven, place on stove, medium to low heat. Add in the trinity (celery, onion, bell pepper) and stir for about 5 minutes on medium low fire for 5 minutes or until the onions begin to be translucient.

Add in 1 or 2 ladles of stock and stir the roux for 3 minutes, then 2 more ladles etc. Add water if you think it's too thick. Add in your fried sausage and chicken. Simmer for about 1 hour.

Make your rice.
