3 Cups Flour 2 Cups Mashed Banana
2 Cups Sugar 1 Cup Oil
1 tsp Baking Soda 8 oz Crushed Pineapple
1 tsp Salt 3 Eggs, beaten
1½ tsp Cinnamon 2 tsp Vanilla
⅛ tsp Nutmeg 1 Cup toasted Pecans

Preheat oven to 350º Line bottom of 3-9" pans with parchment, then grease and flour the pans. In a large bowl whisk together first 6 ingredients. Add rest of the ingredients and stir just until moistened. Bake for 28-30 minutes. Cool in pans 10 minutes then turn out onto wire racks. Cool completely, about an hour, then frost.
***This would also be good with Ermine frosting***

2-8 oz Cream Cheese
1 Cup Butter
2 lb sifted Powdered Sugar
2 tsp Vanilla

Beat Cream cheese and butter. Slowly add the powdered sugar and vanilla. When the cake is cool, frost and assemble all layers.
