1-4 oz pkg Bakers White Chocolate
28 square Shortbread Cookies
2 Tbsp Butter, melted
½ Cup and 2 Tbsp Sugar
2-8 oz pkg Cream Cheese
1 tsp Vanilla
1 tsp Zest + ¼ Cup Juice from 2 Lemons
2 Eggs

Directions:

Heat oven to 325º Melt 2 oz chocolate as directed on package. Set aside. Crush 16 cookies, add butter and 2 Tbsp sugar. Mix and press into the bottom of 12 paper-lined muffin cups. About 1 Tbsp each. Beat cream cheese, vanilla and remaining sugar until blended. Add zest and juice and mix well. Add eggs one at a time mixing on low just until blended. Spoon onto crusts Bake 17-20 minutes or until centers are almost set. Cool completely. Melt remaining chocolate. Coarsely chop remaining cookies. Sprinkle over the cheesecake then drizzle with the chocolate. Refrigerate 2 hours.
