2 Boxes Thin Mint Cookies
3 Tbsp Unsalted Butter, melted
pinch of salt
2- 8 oz pkg Cream Cheese, softened
¾ Cup Powdered Sugar
1 tsp Peppermint Extract
2 Cups very cold Heavy Cream
Chocolate Sauce to drizzle if desired

Coat a springform pan with spray, line with parchment paper then spray again. Crush one box of cookies into fine crumbs, mix with butter and salt and press into the pan. Refrigerate. Beat cream cheese until softened, then beat in the sugar and peppermint. Gradually add the cream and beat on high until stiff peaks form. Crush 6 cookies and fold into cream cheese mixture. Spread over the crust and refrigerate at least 5 hours or overnight. To serve, release the cake from the pan and transfer to a serving platter. Press cookies onto the sides and all the way around. Lightly crush remaining cookies and sprinkle on top. Drizzle with chocolate sauce.
