6 Tbsp Unsalted Butter
¾ Cup Light Brown Sugar
1 20 oz Can Pineapple Slices, reserve juice
1 13 oz Can Coconut Milk
2 Eggs
½ Cup Canola Oil
1 Box Yellow or Vanilla Cake Mix

Directions:
Directions:
Heat oven to 375º Lightly grease a mini cake pan. Melt the butter in a small pot. Add the sugar and heat just until melted. Spoon 1 Tbsp around the bottom of each then place a pineapple slice on the top. In a large bowl whisk together coconut milk, eggs and oil. Add the cake mix and whisk to combine. Spoon the batter into each, leaving ¼" space on top. Bake until puffed and golden 24-28 minutes. Turn out immediately onto a board then bake the rest .
+++ Instead of the coconut milk, you can substitute the reserved pineapple juice with enough water to equal 1 cup.
