1½ - 2 lbs. boneless chicken breasts
(results in 5-6 cups shredded chicken)
water or chicken broth -
enough to cover chicken in a large pot
1½ cups shredded cheddar cheese
1½ cups Buffalo Wing Sauce
1 cup ranch dressing
1 (8 oz.) pkg. cream cheese, softened

1. Put the chicken in a large pot. Cover with water or chicken broth.
2. Bring to a boil and cook 15-20 minutes or until the chicken is cooked through.
3. Use tongs to remove chicken from the pot. You can save broth for stock if you'd like.
4. Put the chicken on a cutting board and let it sit until cool enough to handle.
5. Preheat oven to 350º.
6. Using 2 forks or a fork and your hands, pull the chicken apart into shreds as thick
or thin as you like. Think of what would work best for scooping onto a chip. Or you
can put the hot chicken into a food processor and pulse to get a good result.
7. In a large bowl mix together the cheddar, buffalo sauce, ranch dressing, and cream
cheese. Mix well to avoid lumps of cream cheese.
8. Add the shredded chicken to the bowl and stir until well coated.
9. Transfer to a 9x13 inch pan. Bake uncovered for 30 minutes or until bubbling.
10.Let cool slightly, then serve with chips.
 

Lemon Chicken

2 whole boneless chicken breasts
½ cup flour
1 cup chicken stock
2 tsp. lemon juice (a little more is ok)
½ cup parsley, chopped
1 small onion, chopped
2 tbsp. butter

Directions:
Directions:
1. Cut chicken in half lengthwise for thinner pieces.
2. In a flat dish press chicken in flour on both sides and reserve.
3. In a small bowl combine chicken broth, lemon juice, parsley and onion; reserve.
4. Lay out 4 chicken breasts in ovenproof casserole.
5. Pour onion and lemon juice mixture over the chicken and dot with butter.
6. Bake in a preheated oven at 425º for 20 minutes.

The spicy creamy Buffalo Chicken Dip is a favorite of Emily's. She and Johnny enjoy it on game day. It is sure to please a crowd. The Lemon Chicken is another famous dish to come out of the kitchen of John and Dawn. The lemon and butter enhances the flavor of the chicken. Both are mouthwatering family favorites.
