2 cups sugar
1¼ cup vegetable oil
3 eggs
2 cups shredded carrots
1 - 14 oz. tin shredded pineapple, juice and all
2 tsp. vanilla

2½ cups flour
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
¼ tsp. nutmeg
¼ tsp. ground cloves

Icing:
1 - 4 oz. pkg. cream cheese
¼ cup butter or margarine
2 cups icing sugar
2 tsp. vanilla

Sliced almonds for garnish.

Directions:
Directions:
Beat sugar, oil & eggs together until foamy. Add carrots, pineapple and vanilla and mix.
Mix dry ingredients together and add to wet ingredients.
Pour into one very large pan or two 9 x 9" pans and bake at 325ºF for 35-40 minutes.
Cool.

Beat with electric mixer until fluffy cream cheese, butter, icing sugar and vanilla. Spread on cooled cake(s) and sprinkle with sliced almonds.
