1¼ c. flour
1 c. sugar
½ tsp. baking powder
½ tsp. baking soda
½ tsp. salt
2 eggs
3 ripe bananas, mashed
2 tsp. vanilla extract
½ c. milk
1 Tbs. vinegar
½ c. butter, softened
½-1 c. chopped walnuts, optional

Directions:
Directions:
1. In a large bowl, stir together flour, sugar, baking powder, baking soda and salt.
2. In another bowl, combine eggs, bananas and vanilla.
3. In a small bowl, combine milk and vinegar. Let sit until thickened.
4. Add butter to banana mixture and mix until combined. Then add milk/vinegar mixture and blend well.
5. Add banana mixture to flour mixture, stirring just until combined. Fold in nuts if desired.
6. Pour into greased loaf pan and bake at 325º for approx. 1 hour and 20 minutes, or until edges are golden brown and middle tests clean with a toothpick.
7. Cool on wire rack. To stay moist: wrap in wax paper and then foil.
