1 3/4 C. all-purpose flour
2/3 C. sugar
1 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1/2 C. shortening (Crisco)
1 C. mashed ripe bananas, (about 2 medium)
2 eggs, lightly beaten

Preheat oven to 350 degrees. Grease and flour a 9”X5” loaf pan. In a large bowl add the first 5 ingredients, cut in shortening until the mixture resembles coarse crumbs. With a fork, stir in bananas and eggs just until blended; spread batter into prepared pan. Bake 55 minutes to 1 hour until a toothpick inserted in the center comes out clean. Cool in pan on a wire rack 20 minutes, remove from pan and cool completely on rack. Makes 1 loaf.

Finally a banana bread that actually tastes like bananas. I tried many recipes over the years, and this one truly delivered. My take on the recipe is as follows: I combined the shortening with the dry ingredients, with my hand mixer, until the mixture was fully combined and made a fine crumb. I also used 3 medium sized bananas and and 1/2 cup chopped nuts.
