Dressing:
1-2 juicy limes
1 T maple syrup
1 t salt
3 T rice vinegar
1/3 c coconut aminos or tamari
3 T grapeseed oil
1-2 T sesame oil
4 green onions thin slice

Noodles:
12 oz noodles (rice or soba). I used sweet potato noodles fix as directed
1/2 cucumber sliced thin
1 lg carrot sliced thin
1/4 red cabbage sliced thin

Garnish:
1/4 c chopped cashews
1/4 c chopped cilantro

Directions:
Directions:
I soaked the sweet potato noodles in warm water until done (cut with scissors). Rinsed with cool water.
Toss with dressing and add veggies.
Top with nuts and cilantro
