Ingredients: 4 oz. cream cheese 1 3 oz. pkg cheese cake pudding mix - HALVED. Substitute vanilla if unavailable. 1/2 c. vanilla creamer 1 c. peaches, sliced 1 c. mandarin oranges 15 oz. can pineapple tidbits, drained - HALVED 1 c. kiwi slices, approximately 3 1 c. strawberries 1 banana, chopped 1/2 T. lemon juice

Directions:Place the softened cream cheese in a bowl and mix until smooth. Add the pudding mix and combine fully. Add the creamer to the cream cheese mixture approximately 1-2 Tablespoons at a time to ensure a smooth consistency. (adding it all at once will cause the mixture to be lumpy.) Clean and cut all fruit except the bananas into small, bite-sized pieces. Combine the fruit with the cream cheese mixture. Cut up banana and toss with lemon juice to prevent browning. Gently add to the fruit salad. Chill until ready to serve. |

Notes: This recipe was originally twice this size and had mango rather than peaches. The mango was too bitter and the salad does not keep well at all so make only as much as can be eaten at time of serving.
