4 eggs, SEPARATED
1 T. cold water
1 1/2 c. sugar
1/3 c. hot water
1 1/2 c. cake flour
1 1/2 t. baking powder
pinch of salt
1 t. vanilla
1/2 t. cream of tartar

Directions:
Directions:
Beat egg yolks and cold water until light and lemon colored.

Add sugar and beat until smooth. Add hot water.

Combine and sift in cake flour, baking powder and salt. Stir in vanilla and beat hard.

In separate bowl, beat egg whites until foamy. Add cream of tartar and beat until stiff. Fold into batter.

Bake in an ungreased 10" tube pan or bundt pan for 1 hour at 350º. When done, invert to cool.

Good with strawberries for strawberry shortcake. More airy yet more dense than angel food cake.
