See Nancy's Cornbread Meatloaf! It's not TexMex.
Preheat to 425º
Grease a 9x13 casserole dish.

2 pkgs Jiffy cornbread mix
1.5 lb ground beef
1 can Rotel
1 can whole kernel corn, drained
1 can Ranch Style beans
1 C shredded cheddar cheese
1 pkg taco seasoning

Directions:
Directions:
Mix cornbread. Brown & drain meat.
Add seasoning, veggies, Simmer 5 min.
Stir into cornbread mix. Mix in cheese.
Pour into greased dish.
Bake 25-30 min until toothpick comes out clean.
Top w/more cheese, salsa, sour cream.
