8 cups tomatoes
3 large onions
1 to 2 green peppers
1 15 oz. tomato sauce
2 Tbsp. salt
3 to 5 jalapeno peppers
3 cloves garlic
6 oz. tomato paste
2 Tbsp. vinegar
2 Tbsp. cornstarch, heaping
1/2 cup cold water

Directions:

Chop tomatoes, onions, all peppers and garlic in a food processor. Pour into a pan and add tomato sauce, salt, tomato paste and vinegar. Simmer 15 minutes. Mix together cornstarch and cold water. Add this to the hot mixture to thicken. Pour into jars to seal.
Roma tomatoes make thicker sauce, and it will not be necessary to thicken with cornstarch.
If you like hotter salsa, leave in some of the jalapeno seeds.
For a milder taste, remove the seeds.
