¾ cup butter
¼ cup packed brown sugar
1½ cup all purpose flour
1 envelope unflavored gelatin
¾ cup granulated sugar
¾ cup cold water
¾ cup icing sugar
¾ tsp. almond extract

Directions:
Directions:
In bowl, cream together butter and brown sugar, blend in flour until crumbly. Press into 12 x 8-inch baking pan. Bake at 325ºF oven for 15-20 minutes or until lightly browned.
In saucepan, combine gelatin, granulated sugar and cold water, bring to a boil for 3 minutes. Remove from heat, stir in icing sugar and almond extract. Pour into mixing bowl and let cool until lukewarm. With electric mixer at high speed, beat until mixture holds stiff peaks. (At this point you could add a few drops of food coloring.) Spread over baked base. Chill until set. Cut into small squares with dampened knife. Makes 3 dozen.
Decorating ideas:
1) Tint with food coloring
2) Sprinkle while still sticky with a variety of toppings: sliced almonds, chopped nuts, candied cherries or shredded coconut.
