Ingredients: ⅓ c. honey ¼ c. soy sauce 2 T. lemon juice 1¼ tsp. red pepper flakes 3 T. extra-virgin olive oil, divided 4 6-oz. salmon filets, patted dry with a paper towel Kosher salt Freshly ground black pepper 3 cloves garlic, minced 1 lemon sliced into rounds

Directions:1. In a medium bowl, whisk together honey, soy sauce, lemon juice, and red pepper flakes.
2. In a large skillet over medium-high heat, heat two tablespoons of oil. When oil is hot, but not smoking, add the salmon, skin side up and season with salt and pepper. Cook the salmon until deeply golden, about 6 minutes, but depends on thickness of the salmon. Then flip over and add the remaining tablespoon of oil.
3. Add the minced garlic to the skillet with the salmon, and cook until fragrant, about 1 minute. Then add the honey mixture and sliced lemons, and cook until the sauce is reduced by ⅓. During this time, stir the sauce/lemons around and baste the salmon.
4. Place the salmon on a platter, drizzle with the sauce, and top with the cooked lemons. |

Notes: Dan found this recipe, and I made it the first time when we were up in Bandon, August 2021. We were getting our garage built. Nate had finished getting the forms done for the footings on this day. It was a beautiful (though, of course, windy) day. This dinner was a great end to a great day.
