4-5 lb chicken pieces
garlic pwdr, salt, pepper
1 lg onion, 1 bell pepper,
2 stalks celery, 4 cloves garlic, chopped
1 stick butter
⅔ C vegetable oil
1 C all-purpose flour
6 oz tomato paste
32 oz chicken stock
2 15oz cans tomato sauce
2 C water
2 tbsp sugar
1 tbsp Tony Chacere's

Directions:
Directions:
Season and flour chicken pieces. Brown in butter. Set aside.
Add veggies to oil; stir to deglaze pan & soften veggies.
Add tomato sauce, then Rotel, and fire-roasted tomatoes. Simmer.
Make roux - see page 55. Thin with some chicken stock.
Add remaining chicken stock to tomato/veggie mix.
Stir in roux til creamy. Add water, tomato sauce, sugar, & Tony's.
Next, add chicken & juices.
Bring to a boil, reduce heat, simmer 2 hours, stirring occasionally.

Serve over cooked rice.
