12 c. finely chopped zucchini
4 medium onions chopped
2 large green peppers chopped
2 large red peppers chopped
1 tsp. minced garlic
¼ c. pickling salt

6 c. finely chopped fresh tomatoes
2 cans tomato paste
2 tbsp. crushed red pepper flakes
1 tbsp. sea salt
1 tbsp. garlic powder
4 ½ tsp. cumin
1 tbsp. cilantro leaves
3 tbsp. sugar
1 tbsp. dry mustard
1 tsp. black pepper
1 c. white vinegar
1 c. lime juice (fresh)

Directions:
Directions:
Place first 5 ingredients in large bowl cover with salt stir..leave over night then drain rinse well and drain for another 30 minutes.

Place he last 12 ingredients in large heavy saucepan
Add Zucchini mixture and bring to rolling boil, reduce heat cook 15 minutes

Place in jars, process in water bath for 15 minutes.
