Preheat to 350º. Line 9x13 pan w/parchment AND spray

Cake:
2 c all-purpose flour
3 tsp five spice powder
¼ tsp ground cinnamon
2 tsp baking soda
½ tsp salt
1 c brown sugar
¾ c granulated sugar
4 eggs
1¼ c canola oil (do not substitute butter!)
2 tsp pure vanilla extract
2 lg gala apples, peeled/grated
1 tbsp grated ginger

Frosting:
8 oz cream cheese, softened
8 oz unsalted butter, softened
4 c powdered sugar
4 tbsp cream
2 tbsp pure vanilla extract
1+ heaping tsp grated ginger

Garnish? candied ginger, minced

Cake:
Whisk together flour, five spice powder, cinnamon, soda, salt.
Separately, whisk sugars w/eggs.
Add oil, vanilla to above to combine.
Add dry to wet, folding with spatula to combine.
Fold in apples.
Pour into prepared pan & bake 38-40 min.
(Clean toothpick?) Cool 10-15 min in the pan.
Turn cake out onto wire rack. Cool completely before frosting.

Frosting:
With hand mixer, mix softened cream cheese & butter til light
and creamy. Add powdered sugar, alternating with cream.
Add vanilla & ginger; mix til combined & fluffy.
