Dad's Bread Pudding Recipe

½lb stale bread
4 oz currants or sultanas
¼ pint milk
4 oz margarine
3 oz brown soft sugar
¼ teaspoon mixed spice
1 egg

Directions:
Directions:
Soak bread for at least 30 mins in cold water. Squeeze out all the water
Place the bread in a bowl adding all the dry ingredients.
Melt the margarine & allow to cool slightly.
Add the melted margarine, egg and milk to other ingredients and mix well.
Place in a round or square tin/pie dish (Grease tin if needed).
Put in the oven (Gas mark 6 or Elec 180) middle shelf.
Cook for about 45 mins (insert a knife in the centre to check if cooked).
Leave to cool.

Slice and enjoy with a cup of tea.

My favourite recipe is my Dad's 'Bread Pudding'.

Sadly my Dad passed away in 1986 when I was just 11 years old (my dad was 49). It was such a shock, I was my dad's shadow, wherever he went I was always right behind. My Dad would make a bread pudding on a Sunday, really fond memories. We would go out for a walk whilst the bread pudding was cooling and enjoy a slice when we returned. A couple of years after he had passed away I found the recipe with my Dad's notes on - changing quantities & timings. I have carried on the family tradition and still cook this bread pudding today (normally when my brother or sister are visiting).

I may be biased but I think this is the best bread pudding recipe!
