12 oz mixed fruit
8 oz sugar
8 oz block margarine
½ pint water
2 eggs, beaten
1 lb self rising flour
½ tsp ground ginger

Directions:
Directions:
Place the mixed fruit, sugar, margarine and water in a saucepan then bring to a boil and simmer for 30 minutes. Let cool then stir in the 2 beaten eggs. Fold in the flour and the ginger.

Place in baking tin and bake at 175ºC in a fan over for 1 hour then check for doneness.

The basic recipe is shown below. After making this for so many years, for my own version I change the mixed fruit for sultanas I also add glazed cherries and nuts, swap sugar for muscovado sugar and I add a good shot of "good stuff". The "good stuff" is bourbon! I also substitute mixed spice for the ginger.
