4 slices bacon, diced
1 small sweet onion, diced
1 red bell pepper, diced
2 cloves garlic, minced
1 Tbsp smoked paprika
1/2 tsp chipotle chili powder
1/4 tsp salt
1/4 tsp freshly cracked black pepper
2 tbsp apple cider vinegar
2 tbsp barbecue sauce
2 tbsp ketchup
1 tbsp dijon mustard
1 tbsp brown sugar
2 22 oz cans baked beans (I use Bush's Grillin' Beans)

Preheat oven to 400 degrees F

Heat large oven safe skillet over medium-low heat and add bacon. Cook until brown an crisp and most of the fat is rendered.

Stir in the onion, pepper, and garlic. Cook stirring often, until everything softens, about 5 minutes.

Stir in the paprika, chili powder, salt and pepper. Cook for 1-2 minutes.

Stir in the vinegar, barbecue sauce, ketchup, mustard, and brown sugar until combined.

Stir in the baked beans directly from the can. Bring the mixture to a boil, then turn off the heat.

Cover and bake for 30-35 minutes until bubbly. Remove from oven and let cool slightly before serving.
