8 tiapia fillets
1 whole fresh lime

The Sauce:
1 T olive oil
2 garlic clove
1 red onion, in julienne strips
1/2 green bell pepper in julienne strips
1 14 oz. Mexican style stewed tomatoes
2 large poblano peppers roasted, peeled cut in julienne strips
1 T red wine vinegar
1 4oz can sliced black olives
3 T capers
1 8 oz. can tomato sauce
1/2 t salt
1/4 t coarsely ground pepper
1 T minced cilantro


Cilantro/Lime Rice pilaf

Prepare for freezing: This is a double recipe.
1. Combine all ingredients for sauce and split into 2 quart size baggies
2. Put 4 fish fillets in one gallon size baggie with one quart size bag of sauce. Repeat.

Thaw in refrigerator
In 1 T of olive oil grill fish in a sauce pan. Remove fish. Add the sauce and let it simmer 5 minutes or so. Return the fish to the pan and heat through.
Serve with Cilantro/ Lime rice pilaf.

This is a great alternative to heavy Mexican food. It has all the flavors in a light meal.
