apples, peeled and sliced
1 T lemon juice
1 T vanilla extract
1 c. granulated sugar
1 c. firmly packed brown sugar
cinnamon
nutmeg
cloves

Directions:
Directions:
Fill the crockpot with apples. Cook on low overnight. Add all of the other ingredients. Mash with a potato masher until you reach the desired consistancy.

Canning:
Wash and sterilize the jars. Pour the hot apple butter in the jars, leaving 1/2 inch headspace. Use a butter knife to debubble them. Wipe all rims with white vinegar. Screw rings on finger tight. Place jars in the waterbath with boiling water, making sure they are cover with 1-2 inches of water. Bring water back to a boil. Leave them in there for 10 minutes. Pull them out, put them on a level surface, and cover them with a towel. Let them cool before touching them.

*Take off rings before storing them.
*Store in cool, dark place.
