Dough: 2¾ cups Flour
½ to ¾ cups warm water
½ cup soft butter

Filling: 2 lbs Riccotta
1 lb Mozzarella
5 Eggs
¼ lb chopped Prosciutto
½ lb Pepperoni thin sliced
¼ lb Capicola chopped
1 Tbsp Parsley
½ cup Parmesan Cheese
Pepper

Directions:
Directions:
Make the dough, Mix ingredients for dough. Knead until soft, let rest 30 minutes to 1 hour. Cut into 4 pieces for 2 pies. Roll out thin and place 1 dough into a pie pan. Repeat with 2nd dough in another pan.
In a bowl, mix ricotta, mozzarella, parsley, parmesan together. Add eggs 1 at a time, mix well. Add prosciutto and capicola. Mix well. Spoon into pie shell, top with pepperoni slices in middle then add more ingredients. Cover with 2nd pie shell. Repeat for 2nd pie. Bake 400º 15 minutes, lower over to 325º and make fork holes on top crust, brush with egg whites then bake another 40 minutes.
