1 stewing chicken
2 celery stalks
1 onion
2 whole carrots
Endive (1 bunch)
Salt and pepper
Grated Pecorino Romano
Meatballs

Directions:
Directions:
Make a stock with the chicken. Simmer 1 1/2 hours, adding water if necessary. Add a whole onion, salt, and pepper. Simmer another hour. Add sliced carrots and celery and cook. Remove chicken from bones, and add meat to soup. Drop in cooked meatballs (see meatball recipe and make bite-sized). When ready to serve, steam endive and add to soup.
