1 cup granulated sugar
1/2 cup light corn syrup
1 cup salted roasted peanuts
1 Tbsp butter
1 tsp vanilla extract
1 tsp baking soda

Directions:
Directions:
Butter a cookie sheet. Combine sugar and corn syrup in a 2-quart glass bowl and microwave on high for 4 minutes. Stir in peanuts and microwave on high 3 1/2 minutes more, then stir in butter and vanilla and microwave for 1 1/2 minutes. Stir in baking soda until light and foamy. Pour onto a cookie sheet and spread thin. Cool completely and break into pieces and serve. www.allrecipes.com. Note: Ms. Ruth would always make the best Peanut Brittle and in the microwave. We always enjoyed it when she made a batch and brought it to church.
