Mom's Baked Zucchini (Green Squash) Recipe

6 small or 4 large zucchini
butter
1 medium onion
1/2 cup or more grated Romano cheese
3/4 cup flavored bread crumbs
3 tsp fresh chopped parsley
salt and pepper

Directions:
Directions:
Wash squash-Do not peel. Remove ends and discard.
Thinly slice into 1/2 inch slices. Set aside.
Slice onion into almost transparent slices. Set aside.
Mix parsley with bread crumbs.
Butter a baking pan.
Arrange squash with 1 slice overlapping another in layers.
Dot each layer generously with butter, onion, breadcrumbs, cheese and seasoning (saving the most cheese and breadcrumbs for topping)
Dot top breadcrumbs/cheese with butter.
Cover with foil
Bake at 350º for 1/2 hour.
Remove foil and return to oven for 10 minutes or until top crumbs are browned.
*You may speed up cooking by parboiling onions and squash and drain well . Bake only until topping is browned...I never do this.
