Pie Dough:
1 1/2 C Flour
1/2 tsp salt
1/2 C Crisco
4-5 or more tbsp cold water

Filling:
6 C fresh peeled and sliced peaches
3/4 C sugar (+or -)
1/8 tsp salt
1/2 tsp cinnamon or mace
3 tbsp flour
2 tbsp butter

Directions:
PASTRY
Prepare pastry amount based on lattice or rustic fold over type pie.
Sift flour and salt together.
With pastry blender or fork cut Crisco into the size of small peas.
Add very cold water a little at a time, mixing with fork until moistened (I usually need more water than listed). Wrap pastry in plastic wrap in a round flat form and refrigerate.
After refrigerated roll out pastry into shape based on lattice or rustic fold over type pie.

FILLING
Fold gently together 6 cups (+) of peaches with sugar, salt, mace/cinnamon, and flour. Spread into prepared pie pastry. Dot with butter.

BAKE
Bake at 400º for 45 to 55 min.

FROZEN
Bake on lowest rack in preheated 450º for 15 min. Reduce heat to 375º . Bake additional 35-55 minutes.
