1 egg- separated
Vanilla pod or extract
75g caster sugar
80g mascarpone cheese
I packet sponge fingers
300ml strong coffee (dissolved)
4 tbsp rum or brandy
Chocolate grated

Combine the alcohol and coffee and pour over the sponge fingers (in a bowl), soak.

Whisk the egg yolk and sugar until pale. Add the mascarpone and vanilla to the egg/sugar mixture, blend well.

Beat the egg white to form stiff peaks and fold into the mascarpone mixture.

Arrange half of the sponge fingers in a serving dish, cover with half of the mascarpone mix. Sprinkle with grated chocolate. Repeat layers ending with mascarpone and grated chocolate.

We have two family favourites, lemon meringue and tiramisu. The former reminds me of my mum and childhood, whilst tiramisu definitely belongs to my husband. In the 1980s Paul made me my first and continues to be solely in charge of its preparation. I have fond memories of our daughter standing on a chair to help, making something she called “tinned soup”! Recipes of this dessert vary tremendously and you can never be sure what to expect if eating out, but we are loyal to this one which is definitely more trifle than cake.
