Cooking oil
Sweet onion sliced thin into rings
2 cups all purpose flour
2 cups buttermilk
Cajun seasoning
garlic powder
hot paprika
Cayenne pepper to taste
salt and pepper

Directions:
Directions:
Pour buttermilk into a bowl. Place a few of the onion rings into the buttermilk making sure each ring is covered in buttermilk.

I large bowl place the flour and spices. Mix well. Dip each ring into flour mixture.
Remove and place on a large cookie sheet. Let sit for a few minutes and then dip in buttermilk and flour once more and place back on cookie sheet.

Pour cooking oil into a frying pan and heat to about 350º. Once heat is ready drop onion rings one at a time. Be sure and to not crowd the fryer. Fry until golden brown. Remove and drain on a paper towel and sprinkle with salt.
