1 banana
2 eggs
2/3 c. oats
vanilla to taste (1/2-1 tsp)
cinnamon to taste

mash banana and mix all ingredients. Cook as you would normal pancakes (skillet on medium heat) but these will not bubble.

Add or substitute anything you wish - chocolate chips, peanut butter, etc.

These were a recipe from my college roommate, Bethany, and how we found out Isaac was allergic to eggs as a baby.
They are perfect for toddlers or babies starting to eat solids. I also eat them as a healthy and very filling breakfast for me.
