8-10 Potatoes
2 Medium Onions
2 Large Carrots
Button Mushrooms
4 stalks of Celery
2 Garlic cloves
200g Green Lentils
Parsley (about 2 tbsp)
1 big teaspoon of Mixed Herbs
½ to 1 teaspoon of Cinnamon
1 tablespoon plain flour
1 tablespoon soya butter
1 tablespoon tomato paste/puree
1 Veg stock cube
500ml boiling water
Salt and Pepper

If necessary, soak lentils for 2-3 hours.
Peel and boil potatoes.
Dice Onions, Carrots, Celery and Mushrooms
Crush Garlic
Add Soya butter to hot pan and sweat off onions and garlic
Add the rest of the veg and cook for around 10 minutes (stir regularly)
When veg is cooked and starting to brown, add the flour and coat the veg
Add salt and pepper, cinnamon, mixed herbs and parsley
Make 500ml of stock* with the veg cube and water
Mix tomato puree with the stock
Add stock to the veg very slowly, continue until the stock is absorbed and thickened
Drain lentils (if you’ve soaked them) and add to the pot
If too dry add more water/stock
Leave to simmer for 40-45 minutes – stirring regularly – KEEP HEAT LOW
Add a tablespoon of vegan brown sauce (I used marmite as I didn’t have any brown sauce)
When lentils are cooked put the veg mix in a casserole dish
Mash potatoes with Soya butter and Soya milk (I also added Wholegrain Mustard)
Spread the potatoes over the top of the veg mix
Cook in the oven for 20-30 minutes

Weird gravy I invented to go with this:

Veg stock
Tomato puree
Gravy Granules (Tesco’s own ‘Everyday’ version is vegan)
Boiling water
Lots of pepper

You’ll need a lot more stock as the lentils suck it all up. So make more than 500ml so you can add along the way, you can also use it for the gravy.
