5 cups finely chopped rhubarb
1 cup sugar
1 2oz. Jello Packet (strawberry or raspberry)
3 cups mini marshmallows
1 box yellow cake mix

Directions:
Directions:
Preheat oven 350°.

Place 5 cups rhubarb at bottom of greased 9X13 cake pan.

Pour sugar and jello packet over rhubarb, and lightly mix. It’s okay to have lumps of sugar and jello. Top with 3 cups of mini marshmallows.

Make box cake as directed on package and spread this evenly atop the marshmallows- do not mix- it won’t turn out.

Bake at 350° for 40 minutes. Cool completely and top with whipped cream before serving.

Add chopped apples and sub lemon jello for Apple Rhubarb cake.
Sub peaches for rhubarb and sub orange jello for Peach Cake
