8 lb turkey

Turkey brine:
1/2 C salt
1/2 C brown sugar
2 C hot water
2 C pineapple or apple juice
4 C ice

Directions:
Directions:
Dissolve salt and brown sugar in hot water. Stir in juice and ice. Submerge rinsed turkey in brine for at least 2 hours in refrigerator. Add more water as needed to cover turkey.

Place thawed and brined turkey on roasting rack after patting dry with paper towels. Rub salt and pepper on bird, then rub with olive oil. Bake uncovered at 425 for 40 minutes, then reduce heat to 325 until turkey reaches 165-175 degrees Fahrenheit in thickest section of the meat. Allow 12-15 minutes per pound. May use foil to cover sections browning too quickly during last hour of cook time if needed. Allow turkey to rest 20-30 minutes before carving.
