4 eggs (separated)
400 g (14 oz) Mascarpone
300 g (11 oz) Pavesini (or Saviordi)
Espresso coffee (cold)
4 Tbsp sugar (I use half the sugar)
Bitter chocolate or Cocoa

Directions:
Directions:
1. Beat egg whites until stiff. Set aside.
2. Beat egg yolks with sugar until foamy.
3. Add mascarpone with a wooden spoon.
4. Fold in the beaten egg whites.
5. Dip biscuits in coffee - don't soak. (If desired, add brandy, rum or other liqueur to the coffee -- I don't add anything).
6. Layer bottom of a trifle bowl or glass pan with soaked biscuits.
7. Layer cream mixture over top.
8. Repeat layer of biscuits, cover with cream. Form as many layers as necessary.
9. Sprinkle top with shaved chocolate or dust with cocoa.
10. Refrigerate for a few hours or overnight.
